Pulled Pork Cooking Instructions

Cooking Times and procedures varies by the size and type of grill or smoker your are using.

1 Hour before you plan to start cooking soak your Hickory Wood in water.

 Standard BBQ Grill

How to smoke bbq

  • Fill the grill 5-6 inches thick with Charcoal, evenly distributed around
  • Soak in lighter fluid according to fluid packaging..let soak 2 mins
  • Fire it up. Let it burn down until all gray coals
  • Add wood
  • Cook 60 to 90 minutes each side. Put fat side up first
  • Remove from Grill. Wrap in 10ft. piece of 18in wide heavy duty aluminum foil. Wrap air tight wrapping over and over again folding sides in tightly each time you wrap it around.
  • Put in the oven on 275 degrees for 8 hours. Check Internal temperature with a probe thermometer to ensure internal temp of 165 degrees
  • Remove from the oven. Unwrap and begin to shred (chop) the meat to your desired size. Remove all the fat
  • Apply pig juice. About 8 to 12oz per Butt. Toss BBQ as you slowly apply it

Small Charcoal Smoker

How to smoke bbq

    • Fill the grill 4-5 inched thick of Charcoal evenly distributed accross
    • Soak in lighter fluid according to fluid packaging..let soak 2 minutes
    • Fire it up. Let it burn down until all gray coals
    • Add wood
    • Cook 60 to 90 minutes each side. Put fat side up first.
    • Remove from Grill. Wrap in 10ft. piece of 18in wide heavy duty aluminum foil. Wrap air tight wrapping over and over again folding sides in tightly each time you wrap it around.
    • Put back on grill for 8 to 10 hours. Check Internal temperature with a probe thermometer to ensure internal temp of 165 degrees. Depending on how well constructed your smoker is, you may have to move to oven if temperature drops below 190 inside smoker. Cook remaining time in oven at 275 degrees
    • Remove from the oven. Unwrap and begin to shred (chop) the meat to your desired size. Remove all the fat
    • Apply pig juice. About 8 to 12oz per Butt. Toss BBQ as you slowly apply it

Electric/Gas Smoker

How to smoke bbq

  • Follow smoker instructions for water and wood chips
  • Smoke Butts 6 to 8 hours
  • Check Internal temperature with probe thermometer. Ensure it meets at least 165 degrees
  • Remove, cut into to ensure it’s done visually
  • Shred desired amount and remove all fat
  • Apply pig juice. About 8 to 12oz per Butt. Toss BBQ as you slowly apply it.

Rib Cooking Instructions 

Standard Charcoal Grill or Small Smoker

  • For a charcoal grill, add a nice even layer of charcoal as if you were going to cook burgers. Make sure charcoal is even
  • Fire up. Wait for it to burn down to gray coals. Add wood chips
  • Lightly Coat ribs in rib rub
  • Place Over Hot Coals Bone Side Down
  • Cook 10-20 Minutes (till a good color)
  • Turn ribs over (Meat side down)
  • Cook an additional 10 – 20 Minutes (till a good color)
  • Remove from grill. Lightly coat in Lawry’s seasoned salt
  • Wrap airtight in aluminum foil 3 times
  • Cook an additional 2 to 3.5 hours either on the grill or in the oven at 275 degrees

Chicken Cooking Instructions

Standard Charcoal Grill or Small Smoker

Split Breast Chicken

  • For a charcoal grill, add a nice even layer of charcoal as if you were going to cook burgers. Make sure charcoal is even
  • Fire up. Wait for it to burn down to gray coals. Add wood chips
  • Coat Chicken to taste with Rib & Chicken Rub. The more you put the spicier it will be.
  • Place Chicken Bone side down on grill or smoke.
  • Cook for 30 to 45 Minutes on each side.
            Whole Chicken
  • For a charcoal grill, add a nice even layer of charcoal as if you were going to cook burgers. Make sure charcoal is even
  • Fire up. Wait for it to burn down to gray coals. Add wood chips
  • Coat Chicken to taste with Rib & Chicken Rub. The more you put the spicier it will be.
  • Place Chicken Breast side down on grill or smoke.
  • Cook for 1 to 2 hours on each side.
  • Cook times will vary with size of chicken.
  • Use probe thermometer to check Internal temp to ensure 165 degrees.
